The Global G-2 20cm Cooks Knife is long bladed and features a deep tapered blade so that the edge remains sharper and longer. This all-purpose Chef’s knife is similar to a ‘Samurai sword blade’ and has an extra sharp knife blade that is made from its own proprietary high-tech Cromova 18 stainless steel, ice tempered and hardened to Rockwell rating of 56-58. Cromova 18 stainless steel is a composition of 18 percent chromium that offers excellent stain resistance plus Molybdenum (MO) and Vanadium (VA) elements for good edge retention. Therefore, the knife blades are free of stains, corrosion or rust formation.

The G-2  knife blade is really hard that it could hold its sharp cutting edge longer but at the same time, you can sharpen the blade quite easily. This knife blade allows the Cook to slice through foods without any effort, preserving the consistency and quality of the ingredient, thereby enhancing its flavour. You could also find that this knife is ground to a straight point as opposed to the western style of bevelling the knife’s edge. It is recommended by Global that you should use a ceramic whetstone or water stone for occasional re-sharpening. This would improve the sharpness of the edge. You can also make use of traditional steel for sharpening, but this may bruise the metal and in fact make the edge more fragile. Use a stone that could polish the edge down to an even and smooth sharpness.

The deep tapered blade of this G-2 20cm Chef’s knife is ideal for slicing or chopping. However, they are not suitable for carving and thus necessitate the use of a shallower blade.
